“As the author of a book focused entirely on rosé wines from around the world, I have to say rosé. Some of my guests and clients will request a Mourvèdre-dominant pink wine like Bandol or even a slightly harder-to-find option like a Tibouren rosé. I typically will serve them Pascal Jolivet Sancerre rosé from the Loire Valley as an alternative to Provence. Although it’s made from the one grape varietal, Pinot Noir, this pink wine is extremely layered. It has the lovely pale salmon color that people tend to love, and offers up super-refreshing acidity, tart strawberry notes, and great minerality. They offered free wine classes to employees, and I fell headfirst in love learning about the various grapes, history, styles and producers. Everything you should be drinking, from rosé and Txakolina to Australian Riesling and makgeolli.
“My prediction for the ‘official wine of the summer of 2021’ is Rosé Prosecco. Prior to 2020, Prosecco legally had to be made from one grape, a white wine grape called Glera. If any other grape was blended with Glera like Pinot Noir, or Pinot Nero as it is known in Italy, it would be declassified and would have to be called a Rosato Spumante or a sparkling pink wine from Italy. Now that Rosé Prosecco has the official designation of DOC status, you will see a proliferation of these pink sparkling wine options hitting the store shelves in large numbers. And with the attractive color, the approachable flavor profiles, and the affordable price tag, I predict that Rosé Prosecco is going to be the ‘it’ wine of the summertime.”

World Wine Guys: What is it about rosé that inspired you to write a book about it?
Charles Springfield: There are so many inspirations when it comes to why I decided to go down the route of writing a rosé wine education book. The major inspiration for writing this book, however, is my wine students. Their thirst for knowledge about different wine styles and categories inspired me to write a book to strip away the hype surrounding rosé and present the heart and soul of a complex wine category that gets underestimated because of its appearance and overshadowed by social situations. While it is a highly popular and widely consumed wine category now, many people only understand roséfrom a limited point-of-view. I wanted to write a book that shows consumers the full picture. And with the sales of pink wines around the world reaching record heights, it felt like the right time to bring my knowledge and perspectives on the category to the table as my second wine education book.
